My boyfriend and I are a French/American couple and though we speak both languages sometimes get a little lost in specific translations of foods, metric system versus tablespoon conversations...but not a problem with Terresa! We had a wonderfully bilingual evening where the food was as amazing as the conversation and the ambiance! <br />The food seemed simple but delicious at the same time, all with excellent fresh, maximally zero waste ingredients. She was very patient in answering our (many!) questions and even sent an incredible gold mine of a follow-up email listing all of where to buy everything we'd asked about, inspirations on topics we'd discussed, and links to some of her other recipes. <br />Equally importantly, we felt incredibly welcomed by Terresa, who made us feel at home and just like her dinner company that she happened to be also teaching to cook. For anyone considering a class, there's really no reason not to - we talked for days about how wonderful the food and experience was. I hopped down to the Davis (California) Farmers Market and picked up three bunches of kale and swiss chard, then got the farro at a local co-op. Last, I went down the street to a local bush and plucked the rosemary fresh.<br /><br />When I started the prep my family was more than a bit skeptical of how this was going to come together. However, I began to win them over when I served them the 'cocktail' of leavings from the kale/chard cooking, and then blew them away with the final product. <br /><br />The combination of the rosemary, lemon and garlic is just incredible and perfectly balances the heat of the pepper flakes. The potato, farro, and squash give the soup a hearty feel that extends into the broth, which becomes thicker more flavorful as the soup cooks. <br /><br />As for the greens, well, I probably went overboard with the ribs, but I loved how they changed to character of the greens, especially with the red color of the swiss chard. I used a whole lemon instead of half and was glad that I did. It gave the whole dish a tartness and a subtle sweetness that carried it over the top.<br /><br />This is a total winner!
